In a medium saucepan, heat olive oil over medium heat.
Add sliced onion and cook for 4-5 minutes OR until the onions are soft & translucent.
Blend the can of tomatoes in a blender or food processor until smooth.
Lower the heat to a simmer & cover for 20 minutes.
